Algerian society is considered an exceptionally fertile space for studying customs and cultures related to food and nutrition, as this geographical framework, with its symbolic connotations shared among its inhabitants, is replete with tangible and intangible heritage indicators, which reflect the historical cohesion of the individuals belonging to it on the one hand, and open future horizons to distinguish it from the rest of global societies on the one hand. Other. One of the most prominent common physical indicators that express food habits is the couscous dish, which is known for its framing of the social and anthropological engineering of food, and the connection of how it is managed with various rites of passage and social occasions, whether happy or sad. Whereas, according to the public imagination, it is not limited to the limits of the biological given and meeting the body’s needs for food only, but rather expresses a social and cultural product that frames many daily or occasional interactive situations. Based on the above, this research paper seeks to provide a socio-anthropological reading of the couscous dish, its connection to rites of passage, and its expression of the so-called relationship with food within the framework of the transition from nature to culture, according to the famous expression of Claude Lévi-Strauss, based on a field study in the city of Oran.
