This article explores the relationship between food, identity, and tourism through an anthropological study of the Aurès region in Algeria. It analyzes how culinary traditions, from symbolic rituals of hospitality to regional dishes like chakhchoukha, function as markers of cultural identity and vehicles for heritage tourism. Drawing on anthropological theory, travel literature, and cultural narratives, the study demonstrates that the Algerian table serves as both a social structure and a narrative of belonging. It argues that food practices in tourist itineraries express historical memory, gendered knowledge, and postcolonial negotiations of authenticity within the broader Mediterranean context.
